Minestrone Soup Recipe
Minestrone soup is a typical Italian dish. Almost all restaurants in Italy serve this on their menu. How I remember this classic dish being served to me out of a can when I was a kid by my well meaning but gourmet challenged parents. With its meaty flavor using beef broth or vegetable stock cubes here is a recipe for the gourmet version using fresh ingredients. It’s easy to make and a joy to eat too. Enjoy this recipe and gain the reputation as a master chef in your home. Serves 2 to 4 people.
Ingredients :
1 quart beef broth, 1 / 2 onion, sliced, 3 tablespoon olive oil, 200 grams of zucchini, sliced, 20 grams of parsley, chopped fine, 200 grams of green beans, 100 grams peas, 100 grams of spinach, sliced, 100 grams of white cabbage, sliced, 100 grams of carrots, diced, 100 ml of fresh tomato sauce, Water sufficiently to cover, 200 grams of fresh red beans, Salt to taste, Pepper powder to taste, 3 tablespoons parmesan cheese, grated.
Note: To make a totally vegetarian version substitute beef broth with vegetable broth or stock cubes.
How to Make:
1. Saute the onion in olive oil for 3 minutes, put all the pieces of vegetables and tomato sauce. Pour broth into the vegetable stir. 2. Red beans boiled until soft. Blend half of the beans, add to the soup. Stir. 3. Enter the remainder red beans to the soup, add salt and pepper. Cook the soup for 50 minutes over low heat until boiling. 4. Serve soup while it's hot, sprinkle a little parmesan cheese. |
